Italian Sweet Potato Hash

1 lb ground Italian sausage 

1 medium yellow onion

3 cloves of garlic

2 Zucchini (optional for breakfast)

2 medium sweet potatoes 

1/4 cup shredded Parmesan cheese

(2-4 eggs for breakfast)

 

In large cast iron skillet: (Med/high heat)

-Pre-heat oven to 375

-Brown sausage and season to taste with S&P & Italian seasoning. 

-Dice all veggies into bite size chunks. Mince Garlic.

-Drain meat, do not rinse meat or skillet

-Return skillet to heat, add 2 Tbs of olive oil to the pan. Add garlic to sauté for about 30 seconds then add all veggies, season with S&P & Italian seasoning, and sauté. (Be mindful of adding salt. Parmesan will add salt flavor.)

-When onions turns translucent and zucchini starts to brown add back the meat. 

-Mix well and place whole skillet into oven. Bake for 30min. 

-Pull from oven and coat top with Parmesan. Put back in oven until cheese melts. (For breakfast, add eggs at same time and cook as desired)
